I saved the best for last- percebes! Also known as gooseneck barnacles. You heard that right barnacles! Believe it or not these are super easy to prepare and absolutely delicious! I’d compare the flavor and texture to a mild squid. I had it with a brown butter sauce and the flavor was amazing! The little shells on the outside remind me of a super beautiful turquoise.
